Ep. 39 - 15 Briskets & Little Rub

In this episode I am joined by Jaime, Johnny, Hector, Isaac, and Hiram (virtually) as we talk a little bit of Cowboys football as the melt down they had. The same goes for the Texas Longhorns as they drop their 4th game a row.  We end our headliners by talking a little boxing as Canelo unifies the championship belts.  

Hector and Johnny talk about cooking 15 briskets over the weekend for a gold tournament.  They walk us through the steps as they prep and load 15 1885 choice briskets onto the Pitmaker Vault.  The Vault is able to handle all 15 briskets and only use 2 bags of charcoal over their 12 hour cook.  They then go deep into the night chopping away at the briskets. Hector tells us about his preferred way of wrapping using butcher paper as opposed to foil.  Hector talks about a rub that has been in the works for some years that may be ready to bottle and share with the community. 

We get a little serious as we talk about the recent tragedy of Henry Ruggs as he was involved in a car crash that took the lives of a 23 year old woman and her doggo.  Hector gives us some legal insight as to what charges Ruggs could be facing. We all give our two cents of how something like this could happen.  

I have an idea of cooking an outdoor Thanksgiving meal.  Everything cooked outdoors on gas grills, charcoal grills and smokers.  The guys pass around some ideas of what I can make.  I share the question on our Facebook group...Joe's that cook like pros.   

We end up talking about teaching Hiram to cook his best steak with the equipment he has on hand.  There is some debate between open flame and cast iron cooking.  We also discuss whether its better to cook a ribeye or tenderloin.  We plan to make some videos and instructions easy enough for the average joe to cook their best steak.   

A bunch of joes that cook like pros!!!
